Try these simple and healthy dinner recipes which can be of help. Spinach stuffed sole recipe – This is a very healthy recipe which includes fresh green vegetables like spinach with all the goodness of fish. For this you will need ½ bunch fresh washed and chopped spinach, sliced fresh mushrooms, sole fillets or any other white fish, 1 tsp olive oil, ¼ tsp crushed oregano leaves, 2 minced garlic cloves, 2 tbsp sherry and mozzarella cheese for garnish. Proceed by preheating the oven to 400 degree F and coat a baking dish with a non-stick cooking spray. Take a pan heat olive oil and sauté the mushrooms until they are tender. Add spinach to this and cook for about a minute add garlic and oregano to it. Place the fish fillet on a board and spread this vegetable mixture evenly on each fillet. Roll each fillet tight around the mixture and place the seam side flat on the baking dish. Sprinkle sherry and grate mozzarella cheese to garnish the dish. Bake for 15-20 minutes or till the fish and cheese gets a light brown color. Serve hot with any bread of your choice.
