Mustard Greens

Mustard green is leafy related to cabbage family with piquant flavor.



The Mustard green contains nearly 94 % moisture, which is good in the cabbage family. This vegetable has remarkable good properties considering health point of view.

It has low saturated Cholesterol & fats, with this it is good source of  Vitamins such as 'A' , 'C' , 'E [ ALPH TOCOPHEROUS ], 'K' ,' B6' .



It has source of Minerals such as folate, calcium, phosphorous, potassium, copper and manganese, iron, magnesium. It has low proteins, but has presence of thiamin, Riboflavin, Niacin and dietary fiber. Contents of fats are 13 % carbs 50 % and have calories 21 %, greens can be consumed raw, cooked, boiled or drained.



These plants are cultivated all over world.

High ratio of carbohydrates, fats and protein increases acidic values which are lowest in the mustard greens. Looking to the different properties of Mustard greens, it can be considered as a staple food for the patients suffering from lung diseases due to low
Cholesterol. Due to high content of water and inclination towards alkaly this can be good
for weight loss also.

Asthma patients can have this as daily intake food, because it contents the presence of vitamin ' B6 ' and ' E '[alpha Tocopherol ]. Vitamin ' B6' is the main ingredient for treatment for asthma patients. Magnesium in mustard greens, a mineral that helps in smooth functioning of muscles.

Mustard greens is a great source of pro-vitamin A. There has been found a relationship between consumption of vitamin A and lung inflammation and emphysema. This is especially useful for people who smoke people who eat food rich in vitamin A are not affected with cigarette smoke and therefore some people can live longer even though they are smokers. So it can help look after lung health.

Mustard plant is rich in dietary fiber which helps in reduction of toxins inside the body.



This also helps in proper digestion of food. Dietary intake of Vitamin E and vitamin C help in oxidation of LDL and HDL oxidation. Abundance of mineral and vitamins in green mustard makes it important that this green vegetable is included in regular diet; this will provide necessary nutrition and will also ensure protection against some diseases.

Mustard plant is rich in protein and provides good nutritional support to people. This plant can be used after blanching or can be added to another dish.
